The Qvevri Cellar
Georgian wine ferments in clay vessels sunk into the earth, skins and stems included, and the country never gave the method up. The amber result is tannic, savoury and closer to a light red than to any white you know. Most Kakheti days open at least one qvevri and pour straight off the top of it.

Khinkali and Khachapuri
A khinkali is judged on the count of its pleats and on whether the broth survives the first bite; the stem stays on the plate. Tbilisi classes run about three hours, usually in a home kitchen, and finish with an Adjarian khachapuri — bread, cheese, butter and an egg you stir in yourself.

Concrete and Mosaic
Georgia kept its Soviet decades in plain sight: the Chronicles of Georgia monoliths on the hill above the Tbilisi Sea, mosaic bus shelters on empty highways, and the sanatorium town of Tskaltubo emptying slowly back into the trees. Tbilisi holds a week of city inside four days.
